Smokey Carrot Dip

For me, movie night is not complete without a finger-food snack. Dippable treats are my favorite! 

I like to get creative with my snacking by making healthy yet delicious dips.

my recipe for Smokey Carrot Dip 


5 whole carrots, sliced in half and cut into thirds

1/4 cup almond milk

1/4 cup orange juice

2 tbsp olive oil

1 tbsp red wine vinegar

1 tsp minced garlic

2 smoked chili peppers

1/4 tsp cumin powder

1/4 tsp curry powder

1/4 tsp garlic powder

1 tsp salt

1 tsp cracked pepper

4 basil leaves

Place the carrots on a baking sheet and sprinkle with olive oil, roast in the oven at 400F for 20 minutes.

Add carrots and the rest of the ingredients to a blender and puree. Top with dried parsely and a basil leaf. Pair with your favorite bread, cracker or chip. Enjoy it cold and vegan...or for you cheese lovers, top with baby swiss cheese and broil in the oven for 5 minutes. Yum!!
